Fenugreek Seeds
Fenugreek seeds have a nutty, caramel flavour and a pleasant sharpness. Toasting the seeds will reduce the slight bitterness but toasting for too long will increase it. Toasting until they just begin to change colour is usually about the right amount of time.
Fenugreek seeds are used extensively in South Asian cuisine where, used sparingly it provides and balance between sweeter spices such as cinnamon and more pungent spices such as cumin whilst adding its own caramelised character.
Stored correctly in Kitchen Herbarry packaging whole fenugreek will keep their quality of flavour for up to four years.
Fun Fact: The volatile oil in fenugreek seeds is the main ingredient in imitation maple syrup. Next time you open your fenugreek seed jar inhale the aroma of the whole seeds and see!
