Cardamom (Green)

Part of the ginger family, green cardamom has a warm, camphorous flavour, with fairly strong mint and citrus notes which have a very refreshing feel.

Cardamom's complex flavour profile make it a very versatile spice which works well in many savoury and sweet recipes. It compliments fruit, custard ice cream and teas and coffees and is an essential ingredient in many garam masalas.

Cardamom recipes usually ask for either whole pods or ground cardamom. When used whole it is best to "bruise" the pods first to split them open so they release more of the volatile oils. When a recipe asks for ground cardamom, the pods should be discarded and only the seeds contained within should be ground with a pestle and mortar.

Stored correctly in Kitchen Herbarry packaging whole green cardamom pods will keep their quality of flavour for up to four years.

Fun Fact: In India whole cardamom pods are chewed (not swallowed) to sweeten breath after meals particularly if the meal contains large amounts of garlic.
