Rosemary
Dried rosemary has a savoury, floral and astringent flavour that leaves a fresh after taste. It compliments starchy foods such as dumplings, bread and potatoes and balances the richness of meats such as lamb and duck.
When used in cooking the dried chopped leaves can take a long time to soften so if using in a recipe which doesn't require simmering for a long time it is best to grind with a pestle and mortar first. In long simmering dishes such as stews, however, it works very well without grinding.
Stored correctly in Kitchen Herbarry packaging rosemary will keep its quality of flavour for up to four years.
Fun Fact: Rosemary has long been associated with memory in history. In Australia rosemary sprigs are worn as a sign of remembrance on ANZAC day because the bush is prolific in the wild on the Turkish Gallipoli peninsula.
