Cloves

Cloves have an intense flavour which is sweet and warming with fruity camphorous notes that add a fresh and spicy feel to recipes.

Together with cinnamon they combine to create the taste and aroma of Christmas when used in mulled wine or for studding a ham. A couple of cloves ground with a pestle and mortar will also complement spices such as coriander, cumin, ginger and cardamom in many South Asian dishes.

Cloves have such a strong pungency that one should always be cautious when adding them to recipes or spice mixes lest they should overpower all the other flavours. Two cloves is almost certainly enough when making four portions of a curry.

Stored correctly in Kitchen Herbarry packaging cloves will keep their quality of flavour for up to four years.

Fun Fact: Cloves are dried unopened flower buds and their name derives from the Latin word clavus, meaning nail (as in hammer and nail) due to their nail like appearance.
