Basil

Dried basil has slightly minty and peppery flavour with a subtle hint of cloves. The concentration of the volatile oils in dried basil make it ideal for recipes that require a long slow cook; almost opposite to the more fragrant fresh variey.

It works especially well when added at the start of tomato based pasta sauces recipes, soups or stews and is an excellent addition to stuffings for poultry. If using as a substitute for fresh basil you should only use about one third volume due to the higher concentration of volatile oils.

Dried basil is also an integral part of Italian and some French herb blends and is complemented by garlic, thyme, oregano, sage and rosemary.

Stored correctly in Kitchen Herbarry packaging dried basil will its quality of flavour for up to three years.

Fun Fact: In Romanian tradition a woman who sleeps with basil under her pillow on the night of Epiphany is said to see her future husband in her dreams.
